I always thought the term 'oil down' was cooking process where coconut milk is boiled until the milk has evaporated and you are left with the oil mostly done in thai cooking never heard of the dish i hope someone has cos im intriged now

Years ago I went to an excellent restaurant in Chinatown in San Francisco.
The food was great, but they made next to no effort to make it sound
appetizing. I had pigeon cooked with mushrooms. Delicious, but the dish was
called "Fungus Squab".
