How often do the bookies void bets that are made on "bad" listings (say, odds listed as 3.5 instead of 2.5 for example)

most of the time. The difference between 3.5 and 2.5 would be considered "an obvious error", which is the language most of them use. They reserve the right to void bets and will certainly notice if there is any sort of extra volume being bet on the selection
